Nic is an alumni of Edinburgh Napier University having studied Business Management here from 1991-1995. Having started working in hospitality during university and beyond, Nic opened his first unit in 2003, which was the Grassmarket's Black Bull. Since then, his Edinburgh based pub group, Signature Pubs, has opened a further 20 bars, restaurants and hotels across Scotland. Each venue is unique in delivery, design, offering, and has a mission to serve happiness whilst being one of the leading modern hospitality businesses in the country.
Nic has done it all in hospitality; Bar back, Door man, Barman, Cleaner, Assistant Manager, Manager, Area Manager, Council, Procurement, Sales, Advertising, HR, Training, Operations and he knows how to make a business efficient and profitable whilst never taking his people or customers for granted.
