Moving to university can be an exciting but nervous time. To help new Edinburgh Napier students settle in, four alumni have donated quick and easy recipes which are perfect for a flatmates’ night in or a snack in between classes. Read more about our alumni and download their recipes below.

Slow cooker coconut beef curry & potatoes is all about comfort and ease. With just a few simple steps and ingredients, you can create a hearty, flavour-packed dish that cooks itself while you get on with your day. This recipe was donated by alumnus Gillian Swinton. Gillian graduated with a BA (Hons) Publishing in 2010 and she is the author of The Good Life.


Monkfish curry is a super easy way to make something that tastes like it took way more effort than it did. It’s a rich, comforting curry that’s perfect for a chill night in. This recipe was donated by alumnus William Hardie. William completed his BA (Hons) Social Sciences in 2022 and he's now Commis Chef at Timberyard.

 

Protein balls are the perfect snack to eat in between classes or during a short break at work. They only take 10 minutes to make and you can refrigerate them and take them on the go for when you need an energy booster. This recipe was donated by alumnus Woody Morris. Woody graduated in 1993 with an HND in Journalism. She’s now a Health and Nutrition Life Coach and Paddle Board Instructor and shares healthy recipes and content on her Instagram!

Moroccan-style aubergine boats
are a tasty, budget-friendly way to level up your dinner game. Great for sharing, meal prepping, or impressing your mates without spending hours in the kitchen. This recipe was donated by alumnus Nathalia Tjandra. Nathalia completed her PhD in Brand Leadership in 2013. She is now Head of International and Global Online and Associate Professor in Marketing! Nathalia also runs a food Instagram account where she shares yummy pictures and recipes.
