Finlay Nicol
Finlay Nicol, panellis at the CHME conference Part of the founding family of Edinburgh Gin, Finlay has overseen the production of Edinburgh Gin at both of their sites for the last eight years. In his earlier career as a chef and restaurateur, Finlay honed his skills and understanding of flavour, and has developed a strong grasp of working with local produce from Edinburgh and the surrounding area. He enjoys opportunities to partner and collaborate both at home in Scotland and further afield, continually developing his expertise to create gins that are truly world-class.
